First-order phase transitions stand as a unique opportunity to discover new physics as well as deepening our understanding of nuclear matter in neutron stars. These transitions proceed through the nucleation, subsequent expansion and collision of bubbles, giving rise to the emission of gravitational waves. From all the required parameters to estimate the spectrum, the bubble wall velocity represents one of the most relevant and challenging to compute, due to its out-of-equilibrium nature. In this talk, I will review progress in studying the dynamics of bubbles and the wall speed by means of the AdS/CFT correspondence in contexts relevant for both the early universe and neutron stars.
